this cheesecake you will need: For the base you will need 200gms of plain chocolate biscuit and 100gms of melted butter. For the filling you will need 3 teaspoons of gelatin, 2 tablespoons of water, 500g cream cheese (or 2 X 250gms), 400gms sweetened condensed milk, 300mL of cream and 150gms of white chocolate.
To start with the making of this white chocolate cheesecake first you need to crush the biscuits using a rolling pin and mix it with melted butter. (A food processor crushes fast. ). Before you start preparing the filling, press the mix evenly into the base of a spring form tin and refrigerate it. Then melt the chocolate using the microwave or a double boiler followed by the melting of the gelatin in boiling water. After this beat the cream cheese and condensed milk together using an electronic mixer until soft peaks are formed. Then add the warm gelatin and melted chocolate to the mixture and stir well.
Pour this mixture into the spring form tin that we kept in the refrigerator and let the whole mix set for 4-5 hours in the refrigerator again.
